Penne Arrabiata
Penne Arrabiata Serves: 4

Ingredients:
  • Olive oil
  • 1 tsp crushed garlic
  • 1 can tomato and onion mix
  • 1/2 tsp Italian herb mix
  • 1 tsp red pepper flakes (or to taste)
  • 1 tsp brown sugar
  • Salt and black pepper to taste
  • 125g bacon (1/2 packet) - optional
  • 300g of dry penne


Method:
  1. Put a pan on medium heat and add about 1-2 tbs of olive oil.
  2. Add the garlic and let it fry gently.
  3. While the garlic is cooking, pour the contents of the can tomato and onion mix into a blender and blend until quite smooth.
  4. When the garlic has turned white, add the chilli flakes and cook for about 1-2 minutes.
  5. Add the tomatoes, brown sugar and herbs and simmer for 5 minutes or so on a low heat.
  6. Taste and season with salt and black pepper.
  7. Cook the penne according to the pack instructions, drain and return to the pot.
  8. Add the sauce to the penne and toss around in the pot to coat the pasta.
Serve with a side salad and a generous sprinkle of parmesan or parmesan shavings, made with a potato peeler.
