Preparation:
Combine fillet strips with lemon, salt and pepper and stand for 15 minutes. Char grill or brown fillet strips in a hot pan and set aside. Place all the dressing into a food processor and blend to a smooth, soft dressing.
Prepare a platter of iceberg and rocket for the salad base. Top lettuce with char grilled fillet strips. Drizzle with rocket dressing and garnish with freshly shaved Parmesan cheese.
