- 2 tbsp vegetable oil
- 1 tbsp butter
- 50 g celery, chopped
- 1 large green bell pepper, chopped
- 1 medium onion, chopped
- 300 ml milk
- 100 g Cheddar cheese, grated
- 5 medium eggs, hard boiled
- 8 olives, sliced
- Melt butter with vegetable oil in a large pan
- Add chopped celery, green pepper, and onion
- Sauté vegetables until tender
- Add milk and cheese and heat until cheese is melted
- Add hard cooked eggs and olives and heat through
- Stir well until egg mixture is creamy
- Spread over toast
