This fried rice is best using fragrant Jasmine rice cooked in a wok on high heat. It makes a great weekend meal. Quick and Easy!
Serves: 4
Prep Time: 5 mins
Cook Time:10 mins
- 2 tbs light soy sauce
- 2 tbs oyster sauce
- 600g chicken breast fillets, thinly sliced
- 2 garlic cloves, crushed
- 3 cups cold, cooked Jasmine rice
- 4 spring onions, sliced diagonally
- 2 tbs KNORR Sweet Chilli Sauce
- 2 tbs peanut oil
- 1 red onion, cut into thin wedges
- 2 eggs, lightly beaten
- 1 cup basil leaves
- ¼ cup spring onion, sliced length-wards and fry
1. Combine soy sauce, KNORR Sweet Chilli Sauce and oyster sauce in a small bowl. Set aside
2. Heat a wok over high heat
3. Add 3 tsp oil and half of the chicken and stir-fry for 2 minutes or until browned
4. Transfer to a plate
5. Repeat with oil and remaining chicken
6. Add remaining 2 tsp oil and onion to wok
7. Stir-fry for 2 to 3 minutes or until golden
8. Add garlic and stir-fry for 30 seconds
9. Add egg and rice
10. Stir-fry for 2 to 3 minutes or until egg is well combined with rice
11. Return chicken to wok
12. Add soy sauce mixture, basil and green onions
13. Stir-fry for 1 to 2 minutes or until well combined
14. Spoon into bowls
15. Sprinkle with deep-fried spring onions and serve
